Baked White Sausage

This is another Polish recipe that is absolutely fantastic. "White sausage" is a type of raw sausage you'll easily find in Poland, but it's harder elsewhere. Most British sausages aren't really the same, but I think you could probably substitute some cumberlands without it being too bad. Lidl and Aldi both have bratwursts that are actually pretty close. Best bet is to hit up a Polish shop though.

  • 800g white sausage (raw)
  • 800g onions (white or yellow)
  • 40g lard, or 2 tbsp oil
  • 1 tbsp French mustard
  • 1 tsp marjoram
  • 1 tsp paprika
  • ½ tsp salt
  • ½ tsp pepper
  • ⅓ tsp chilli powder

In a large frying pan add half the fat/oil, then fry the onions with all the dry spices. Fry until brown.

Remove the onions and place in a baking dish, then add the remaining fat/oil and fry the sausages. Poke the sausages to stop them exploding. Fry for 2 minutes each side to get some colour but don’t fully cook them.

Place the sausages on top of the onion, then top with the French mustard.

Bake in the oven at 185C for 40 minutes.

Serve with crusty bread or mashed potato, and either horseradish or garlic sauce depending on preference.
