Chicken Casserole
Chicken casseroles are an easy dish to make because you can change pretty much anything about it. This recipe is a guideline, if you want different veg, or a different pasta, or different spices - Do it!
- 450g chicken breast
- 3 tsp of your favourite spice mix (e.g. kebab spice, chicken spice, or just paprika)
- 200g pasta
- 200g mozzarella cheese
- 1 red bell pepper
- 1/2 courgette (zucchini)
- 1 small onion
- 1/2 tin of sweetcorn, 150g after draining
- 200g chopped tomatoes
- 1 tsp oregano
- Oil for frying
Fill a large pan with water and bring to boil. Salt the water then cook the pasta to package instructions. Once cooked, drain the pasta and then put the pasta in the roasting dish you'll use for the casserole.
Dice the chicken breast and add the spice mixture. Mix well. Heat a little bit of oil in a frying pan, then cook the chicken for around 10 minutes. Put the chicken in the casserole dish.
Next, grate half the cheese over the casserole dish and mix through.
Peel the courgette and dice it. Slice the onion and dice the red bell pepper. Add both to the frying pan and fry for around three minutes, then add the red pepper. After cooking for a few minutes add the sweetcorn and mix through. ADd to the casserole dish and mix well.
Finally, top with the chopped tomatoes and the remaining cheese.
Cook in the oven at 190C for around 15 minutes. The cheese should be melted and bubbly, just starting to get crispy.
