Chicken Gnocchi
This is a great comfort food recipe that is slightly modified from the original which I found on Budget Bytes. The original recipe includes spinach and I also changed the steps to better suit how I cook.
Ingredients:
- 500g chicken
- 1 onion, diced
- 2-6 garlic cloves, depending on preference
- 500g gnocchi, but you could just as well use any other pasta for an equally tasty dish
- 250ml vegetable stock/broth
- 125ml double cream (heavy cream in the US I think?)
- 50g freshly grated parmesan
- 1 tbsp Italian seasoning
- 1/2 tsp smoked paprika
- Salt & pepper to taste
Steps:
- Dice up the onion and chicken. Crush the garlic.
- Add all the spices to a bowl and add the chicken then mix well.
- In a large pot add a splash of oil and heat. Once hot add the onion and garlic and cook until brown.
- Add the chicken and cook until browned on all sides.
- Remove the mixture from the pot then add a tablespoon of butter (or oil) and add the gnocchi. If you're using another type of pasta I'd probably skip this step.
- Add the veg stock/broth and cover the pan. If using gnocchi you only need to do this a couple minutes to rehydrate it. Any other pasta type, probably 10-15 minutes.
- Add the heavy cream and stir through until hot but not boiling.
- Add the grated parmesan and stir through until fully melted
- Add the chicken, onion & garlic back to the pan and stir through until reheated.
