Egg & Leek Salad
If you like eggs and you like leek, you're going to be very excited.
- 5 hard boiled eggs
- 4 medium/small leeks
- Mayo, to taste
- Salt and pepper to taste
I find the easiest way to hard boil eggs is to add the eggs to a saucepan, top with water until it's about an inch higher than the eggs, then put on high heat. Heat until it's a rolling boil, then switch off the heat and leave the eggs for 12 minutes. After 12 minutes have passed, drain the water and put the eggs in an ice bath. Once cooled, peel them.
Slice off the green parts of the leek, then slice the white part in half. Slice them into small pieces. I usually rinse them under a tap now, since leeks tend to have a lot of grit caught inside.
Chop the eggs into small pieces too.
Now in a bowl mix the egg and leek. Scoop in a few tablespoons of mayo and mix until you feel like there's the right amount for you. Sprinkle over salt and pepper, then taste. Add more of whatever you think it needs.
