Garlic Udon
A basic udon recipe from which you can expand to suit your tastes. You can easily make it vegan by replacing the parmesan cheese with an alternative. You can also fill out the recipe by adding a protein source, e.g. fried tofu or grilled chicken.
- 200g udon noodles
- 3-5 cloves of garlic, depending on personal preference
- 20g butter
- 2 tbsp soy sauce
- 1 tsp chili in oil (e.g. Lao Gan Ma brand)
- 10g Parmesan cheese, grated
- 1/2 tsp sesame seeds
- Handful of chopped chives
Start by boiling a pot of water then cook the noodles to package instructions.
Meanwhile crush, grate or chop the garlic then melt the butter in a frying pan and add the garlic. Don't fry at too high a temperature or it'll get bitter. Lower the heat, then add the chili oil and the soy sauce.
Drain the noodles and add to the frying pan and coat in the butter and oil. Add the grated parmesan, then mix well.
To serve, top with the chopped chives.
