Japanese Cucumber Salad (Sunomono)
A light, refreshing cucumber salad. Original recipe from Just One Cookbook.
Dressing:
- 60ml rice vinegar
- 2 tbsp sugar
- 1/2 tsp maldon salt
- 1/2 tsp soy sauce
Salad:
- 1 large cucumber
- 1/2 tsp maldon salt
Begin by adding all the dressing ingredients to a bowl, then microwave for 30 seconds and mix well. The sugar and salt should dissolve. Leave to one side to cool down.
Meanwhile, wash and peel the cucumber, then slice in half. Scoop out the seeds with a spoon, then slice each half in half again and dice the cucumber. Add the cucumber to a different bowl and add in 1/2 tsp of salt, and let it soak for five minutes.
After five minutes squeeze out the moister and add the cucumber to the dressing. Refrigerate if not eating immediately.
