Pita Pizzas
If you are really struggling to find the energy to make something, but want a cheap easy dinner, these are great.
The basics:
- Pita breads, wholewheat ideally but any are fine
- Tomato paste
- Cheese (cheddar, red leicester, double gloucester, or any other hard cheese)
The improvements:
- Italian herbs
- Toppings, e.g. pepperoni, mushrooms, onions
Preheat the grill to 220C.
Put the pita breads on a baking tray.
In a jug, mix a squirt of tomato paste with a little bit of water to make a thick sauce. Add some Italian herbs if you are including them.
Using a tablespoon, put a spoonful on top of each pita bread and spread it out to the edges with the back of the spoon.
Grate some cheese over the top of each pita bread.
If you are including extra toppings, put them on top of the cheese.
Heat under the grill for 5 to 10 minutes, until the cheese has melted and is bubbling.
