Simple Pesto Pasta
A recipe for when you really can't be bothered.
- around 180g dry pasta
- 125ml cream (18% / single)
- 1 jar of green pesto
- 2 chicken breasts
- 1 medium onion
- 1 broccoli
Wash and cut the broccoli into small florets. Dice the onion and the chicken.
Bring a pot of salted water to boil and cook the pasta to package instructions.
Meanwhile, in another large pan, add a tablespoon of oil then fry the onion until golden. Add the chicken and fry until browned. Add the pesto and mix through. Add the broccoli, heating through for a couple of minutes, and then add the cream. Add a dash of salt and pepper to taste.
Drain the pasta and add to the frying pan.
Serve topped with parmesan cheese or mozzarella.
