Tahini Turkey Ramen
A TikTok recipe that is surprisingly nice.
- 2 medium onions
- 4 cloves of garlic
- 2 tsp grated ginger
- 1 Tbsp sesame oil
- 100g dark miso paste
- 50g peanut butter
- 15g tahini
- 1 tbsp chilli oil
- 1 tbsp curry paste
- 2 tsp honey
- 900ml chicken broth
- 400ml coconut milk
- 500ml oat milk
- 2 tbsp soy sauce
- Udon noodles
For the turkey:
- 500g minced turkey
- 1 onion
- 1 tbsp sesame oil
- 1 tsp chilli oil
- 1 tbsp curry paste
- 2 tbsp sweet paprika
- 3 cloves of garlic
- 1 tsp sesame seeds
- 3 tbsp soy sauce
- 2 tsp honey
Mix the meat with finely chopped onion, crushed garlic, the spices and leave in the fridge, preferably overnight.
Chop the rest of the onion, garlic, and grate the ginger. Fry the onion in sesame oil, add the honey, garlic, ginger, and fry together for a few minutes. Add the peanut butter, miso paste, tahini, curry paste, and chilli oil, then fry for a few more minutes.
Add the coconut milk, broth, soy sauce and oat milk.
Bring to a simmer, then cook over a low heat for 15 minutes covered.
Fry the meat in a large pan until fully browned.
Blend the broth, then boil the noodles.
To serve, spoon the noodles and turkey into a bowl, then cover with the broth.
