Tomato Soup
This is a brilliant recipe my wife found on instagram. The original poster is "laurenleyva" if you're interested.
Ingredients:
- 10 large tomatoes
- 6 medium tomatoes
- 2 red peppers
- 8 garlic cloves (original recipe calls for 4 but we love garlic)
- Handful of fresh basil
- 1 vegetable stock cube
- 600ml water
- olive oil
Steps:
- Preheat the oven to 200C. Peel the garlic cloves. Half all the tomatoes and roughly chop the peppers.
- Add the tomatoes, peppers, garlic and a drizzle of olive oil to a large baking tray or roasting tin. Season with salt & pepper.
- Roast in the oven for 25 minutes.
- Once properly roasted pour the tomato mixture into a large saucepan along with 600ml of vegetable stock.
- Bring to a boil and simmer for 5 minutes.
- Add the fresh basil and mix. Add a little salt & pepper if you want to. Blend until it's smooth.
- Serve with buttered bread and enjoy!
