Tomato Soup

This is a brilliant recipe my wife found on instagram. The original poster is "laurenleyva" if you're interested.


  • 10 large tomatoes
  • 6 medium tomatoes
  • 2 red peppers
  • 8 garlic cloves (original recipe calls for 4 but we love garlic)
  • Handful of fresh basil
  • 1 vegetable stock cube
  • 600ml water
  • olive oil


  1. Preheat the oven to 200C. Peel the garlic cloves. Half all the tomatoes and roughly chop the peppers.
  2. Add the tomatoes, peppers, garlic and a drizzle of olive oil to a large baking tray or roasting tin. Season with salt & pepper.
  3. Roast in the oven for 25 minutes.
  4. Once properly roasted pour the tomato mixture into a large saucepan along with 600ml of vegetable stock.
  5. Bring to a boil and simmer for 5 minutes.
  6. Add the fresh basil and mix. Add a little salt & pepper if you want to. Blend until it's smooth.
  7. Serve with buttered bread and enjoy!
