Veggie Fajitas
I think I just guessed this recipe? My notes don't say where it's from, so I think it was my own. Which probably means it's not very good. I should stress this is not even remotely 'authentic' and is the American/British idea of a fajita, which is to say it's very slightly spicy and served in a wrap.
Ingredients:
- 400g black beans or kidney beans, drained
- 1 onion, diced
- 1 garlic clove, crushed
- 2 bell peppers, diced
- 1 courgette (zucchini), peeled and diced
- 1 tsp chilli powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 4 large tortillas or 8 small ones
- Optional toppings: Cheese, soured cream, garlic sauce
Steps:
- If you haven't already, peel and dice the courgette, dice the onion and bell peppers, drain the beans, and crush the garlic.
- Add a splash of oil to a pan and fry the onion and garlic for a few minutes until it starts to change colour. Add the bell peppers and continue to fry until it's soft.
- Add the courgette and continue to fry for a few minutes.
- Add the beans, stir it up, and continue to heat for a few more minutes.
- Warm the tortillas in a microwave.
- Pour the veggie mix into a large bowl to serve.
- Spoon some mixture into a tortilla, top with whatever you like and nom.
